Festive Vegan Matcha Coconut Nog
'Tis the season to keep warm and cozy with this delicious Vegan Matcha Nog! Why not add the health benefits of Matcha to your eggnog it will increase your focus and elevate your mood! And why not make it Vegan using coconut milk? Yum! This fantastic recipe is by our friend Carla Riley.

Ingredients:
- 1 ½ Tablespoons of Genuine Tea Matcha Powder
- 5 Pitted Dates
- 1 Cup of Water
- 2 Cans of Coconut Milk
- 1/3 Cup + 1 Tablespoon Can Condensed Coconut Milk*
- 1 Teaspoon of Vanilla Extract
- ½ Teaspoon of Cinnamon
- ¼ Teaspoon of Turmeric
- ¼ Teaspoon of Nutmeg
- Dash of Black Pepper
*Condensed Coconut Milk can be found at Bulk Barn or in international and health food aisles at your local grocery stores.
Preparation:
- Over medium heat, combine the coconut milk, vanilla, cinnamon, turmeric, nutmeg and black pepper
- Whisk to combine all spices until a foam forms at the top
- Bring the coconut mixture to a gentle boil
- Add water, pitted dates, condensed coconut milk and matcha powder to your blender
- Blend until smooth
- Using a fine mesh strainer add the date and matcha mixture into your pot and stir
- Serve warm or let refrigerate overnight stirring intermittently
